Makes: 4 pancakes
Preparation time: 5 minutes
Cooking time: 10 minutes
Whisk the eggs together, add in the cinnamon and mash the banana into the egg mixture until well combined (you can also use a blender).
Heat a non-stick pan and pour the mixture into it in small portions – don’t make the pancakes too thick, as they’re harder to flip than regular pancakes.
Cook the pancakes for 1 to 2 minutes on each side.
Stack the pancakes on a plate and serve with your chosen toppings – blueberries and a dash of honey are great options for keeping this dish healthy.
